Aja’s moment with Pappardelle
Pappardelle with Duck Ragu…
…the richness and depth of flavor is an experience that will transform you forever. I now know that I have the ability to access taste buds that have apparently been lying dormant, awaiting this moment with duck ragu and expertly prepared hand-made pappardelle pasta.
Chefs in Roma taste the pasta while they cook, checking to be sure that it swims and swirls in a boiling bath of salted perfection until the very last moment when it reaches its peak point of “al dente,” and not one moment too early or too late. (I know this because I kept peeking my head into the kitchen while standing in a tiny corridor of the restaurant, waiting for a next open seat). Chefs here truly enjoy their experience of cooking for their guests and are often smiling, singing, and laughing while they work.
Although rich and decadent, this dish feels delicate and light in the mouth, while also dazzling you with the flavorful personality that only a true Roman duck ragu can accomplish.

fettuccine al tartufo, let me count the ways that I love you…
Approx. 2.5 miles outside of the tournament gates, you’ll find some of the most spectacular meals on the planet (at hole-in-the-wall restaurants run by multi-generational families)…so much history, pride, and love poured into each dish.
Oh, this is heaven on a plate…fettuccine pasta freshly made on-site at the restaurant, bedazzled with decadent truffles and spun together with pure love and truffle oil on a plate. I licked my plate clean.
